Mardi Gras is more than just a party—it’s a celebration of history, culture, music, and indulgence. And this year, the Jams 'N' Cocktails Podcast brought all the excitement of Bourbon Street straight into the Legendary JNC Lounge for a night of vibrant traditions, classic cocktails, mouthwatering cuisine, and live music that captured the spirit of Fat Tuesday.

From the history of Mardi Gras to iconic New Orleans drinks, delicious jambalaya, and the highly anticipated king cake baby hunt, this episode was a full-blown Mardi Gras extravaganza. Whether you're a long-time lover of Carnival season or just looking for an excuse to raise a glass, this recap will transport you to New Orleans—no plane ticket required!


🎭 A Look Back at Mardi Gras: The History & Traditions


Before diving into the drinks and festivities, host Brad Brock kicked off the night with a fascinating history lesson on Mardi Gras and its evolution. While most people associate the celebration with parades, masks, and beads, the roots of Fat Tuesday trace back centuries to medieval Europe.

Originally, Mardi Gras (French for "Fat Tuesday") was a day of feasting before Ash Wednesday and the 40-day fasting period of Lent. When the French settled in Louisiana, they brought their elaborate feasts and masquerade balls, which evolved into the extravagant parades and street parties that define New Orleans Mardi Gras today.

One of the biggest highlights of modern-day Mardi Gras is the crews (Krewes)—private social organizations that design and fund the over-the-top parades that roll through the city each year. Another unique New Orleans tradition? Cocktails! And the JNC Lounge wasted no time getting into the spirit (pun intended).


🍹 Mardi Gras Cocktails: Mixing Up New Orleans Classics


No Mardi Gras celebration is complete without a proper drink in hand. Brad and the JNC crew got behind the bar to craft four of the most iconic New Orleans cocktails:


1. The Absinthe Drip

This legendary anise-flavored spirit was once banned for its supposed hallucinogenic effects. While absinthe has since made a comeback, the traditional French preparation remains a ritual in itself. Brad created a DIY absinthe dripper—a clever (and much cheaper) alternative to the expensive setups found in old-school absinthe bars. The slow-drip process releases the herbal flavors and transforms the drink into a cloudy green masterpiece.


2. The Hurricane

A sweet yet dangerously strong rum punch, the Hurricane was born at Pat O’Brien’s Bar during World War II, when whiskey was scarce, and rum was plentiful. Made with dark and light rum, passion fruit juice, orange juice, and grenadine, this drink is a Mardi Gras staple that packs a punch—literally.


3. The Hand Grenade

Exclusive to Tropical Isle in the French Quarter, the Hand Grenade is known as the "strongest drink in New Orleans." Made with a mix of vodka, rum, gin, melon liqueur, and grain alcohol, it’s served in a signature grenade-shaped cup—though the JNC crew made do without it.


4. The Sazerac

Considered America’s first cocktail, the Sazerac is a bold, spirit-forward drink made with rye whiskey, sugar, bitters, and an absinthe rinse. Brad, ever the cocktail connoisseur, whipped up a perfectly balanced Sazerac that left some crew members pleasantly surprised—and others reaching for a chaser.


🍛 Jambalaya & King Cake: A Feast Fit for Bourbon Street


With the drinks flowing, it was time for some authentic New Orleans cuisine. The JNC crew whipped up a homemade jambalaya, one of Louisiana’s most famous one-pot meals. Made with smoked sausage, chicken, shrimp, and the "holy trinity" of Cajun cooking (onions, bell peppers, and celery), the dish simmered for hours, filling the lounge with bold Creole aromas.

Of course, no Mardi Gras celebration is complete without king cake. Brad baked a stunning cinnamon-filled, sugar-dusted king cake, decorated in the traditional Mardi Gras colors: 💜 Purple for Justice💚 Green for Faith💛 Gold for Power

Inside the cake was the coveted plastic baby—and whoever found it was tasked with hosting next year’s party. After much anticipation, the baby was discovered, marking the official passing of the Mardi Gras hosting torch (whether the winner wanted it or not!).


🎶 Live Music & Mardi Gras Games


As if cocktails and Cajun cuisine weren’t enough, the night featured live music performances by the JNC All-Star Band. From Dr. John’s funky grooves to the classic "Jambalaya (On the Bayou)," the band delivered a true New Orleans-style jam session.

The energy continued with the Mardi Gras Bead Toss Challenge—a hilariously chaotic game where contestants tried to land beads around each other's necks. After plenty of near misses, strategic throws, and a bit of friendly sabotage, a winner was crowned, taking home a special prize (and, of course, more beads).


🥃 A Toast to Old New Orleans Rum


To round out the night, special guest Paul Robertson shared an exclusive taste of Old New Orleans Rum—a now-extinct Louisiana distillery. This rare, aged rum had a deeply spiced, complex flavor, making it a perfect toast to Mardi Gras past and present.

With cocktails consumed, king cake devoured, and beads flying across the room, the JNC Mardi Gras celebration was a resounding success.
